12 oz. Stout or Lager Beer
1/2 cup Maple Syrup
1/4 cup Honey
1/4 cup Mirin
Juice of 1 lemon
2 Tbsp soy sauce
1 Tbsp Sriracha Chili sauce
2 Stars of Star Anise
2 Tbsp Grape Seed oil
4 Cups mixed frozen vegetables, defrosted 
(broccoli,cauliflower,green beans ,baby carrots)

Scallions for Garnish 

Mix together first 8 ingredients in a sauce pot and reduce by half.  Remove star anise. This is your glaze.

Put oil in sauté pan, heat a little on medium heat, add your vegetables.  Sauté for a minute. Add 1/4 to 1/2 cup of your glaze. Cook,  stirring occasionally until all glaze is absorbed and the veggies are slightly browned,about 10 minutes. Top with chopped scallions. Enjoy!
Oh, and  this glaze is great on  meat or fish! 

1 small onion chopped
1 + 1/2 Tbsp grape seed oil
1 cup carrots
1 cup short grain rice (rinsed)

1 1/4 cup light beer
1 cup water
1 Teaspoon salt
2 scallions 

Gently cook onion on medium heat  in oil until  slightly brown (approximately 10 minutes). Then add carrots and cook another 
5 minutes. Add rice, beer, water and salt. Bring to a boil. Cover and cook as low and slow as possible for 45 minutes. Turn off  heat and let rice rest for 10 minutes.  Fluff with fork and top with chopped scallions.
